- Firstly your going to need some eggs. Use at least 2 eggs per person. Break the eggs into a bowl, smell the eggs to ensure they are not off and are okay to consume.
- Next you will need to heat up a non sticky pan on a low heat (not to high). Add 1 table spoon of butter or olive oil.
- Meanwhile, stir the eggs in the bowl so it’s nice and runny, add a little milk, salt and pepper if desired.
- Know the pan should be at a warm temperature and the butter/oil should be spread through out the pan to prevent the eggs from sticking and cooking properly.
- Next, grab yourself a wooden spoon or spatula and slowing poor the mixed bowl of eggs into the warm pan. Make sure you stir the eggs ensuring they don’t stick to the pan.
- Now continue to stir the eggs in the pan, you will start to see the eggs lose all it’s liquid and start to solidify. Keep stiring the eggs untill they are some what moist, ensuring that they are not over cooked and dry!

5. Add the tortilla strips to the skillet of the sauté vegetables.
6. Pour the beaten eggs over the vegetable and tortilla strips, and cook until the mixture settles.
7. Keep stirring while cooking to ensure that the mixture properly settles.
8. Add salt according to taste and serve
9. You can garnish with grated cheese and parsley or coriander but that is optional.
